Description

This cast iron double fiber line stir-fry wok is proudly made in Japan and is recognized as an exceptional cooking tool that retains the benefits of traditional iron fry pans while minimizing rust and maintenance. The unique fiber-like concave-convex surface treatment on both the inside and outside sets this wok apart from other products. It is crafted in Tsubamesanjo Niigata Prefecture an area renowned for its advanced metal processing technology.

The wok features a wide surface area that enhances heat distribution due to its unevenness and double fiber line design allowing it to heat food evenly and quickly while trapping umami flavors. The double fiber technology applied to the surface ensures efficient cooking and compatibility with various heat sources including IH gas and induction cooktops.

Specifications

  • 100% made in Japan.
  • 99.7% high purity iron construction.
  • Wooden handle that is anti-scalding and non-slip.
  • Resistant to sticking and rust.
  • Surface designed to prevent peeling blistering or cracking under heat.
  • Fast heat distribution and durability.
  • Lightweight compared to traditional woks.
  • Caution: The wok may change shape when used on electric glass-ceramic halogen or induction stoves but will return to its original shape upon cooling. This is normal. Gas is recommended for optimal performance.

Differences between Double Fiber and Nitriding Processing Wok

Both types of woks are lightweight cast iron options. The double fiber technology enhances heat distribution and flavor retention while nitriding is a hardening process that introduces atomic nitrogen into the surface of the iron alloy improving its hardness and resistance to rust and damage. Nitriding woks are pre-seasoned and represent an upgraded version of the double fiber line wok ideal for achieving the desired “wok hei” in Asian cooking.
